Pecan Mini Bites Recipe | 5 Ingredients!

Only 5 Ingredients in these Amazing Little Pecan Bites!

pecan mini muffins 5 ingredients goodncrazy 1I sampled these little bites at my bookclub this month and then I had to  try them out on my kids. I LOVE all things pecan, and had never seen these before. Best part? They’re super easy to make. Amen to that.

I used whole wheat flour because I wanted to up the healthy factor & make a huge double batch to freeze for school lunches.

There is plenty of butter so I’m not saying these are uber-healthy but yummy?

5 Ingredient Pecan Mini Bites (double batch =  48 mini bites)

  • 2 Cups Pecans (Pulsed in Food Processor or finely chopped)
  • 1 Cup Whole Wheat Flour (or white flour)
  • 2 Cups Brown Sugar packed
  • 1.5 Cups Melted Butter (2 ½ sticks)
  • 4 Eggs Beaten

Pulse the pecans in food processor with metal blade at bottom. Add flour and sugar to processor and pulse till combined. Beat melted butter and eggs together in a medium mixing bowl, and with a wooden spoon stir the pecan mixture into the butter/egg mixture.

The final mix is quite runny, but don’t despair, it will be worth it.

Using a small ice cream scoop fill your mini muffin pan to ¾ full. I did NOT spray my pan, but I used a silicon type. (I highly recommend it!) See my recipe for mini donuts if you don’t believe me!

Bake at 350 degrees until the mini bites spring back, about 15 minutes for my oven.

Let cool and remove from pan onto a wire rack. After completely cool, freeze in zippered bags.

These are fabulous warm, but snacking on frozen pecan bites is the perfect mid morning snack… (Don’t tell my kids!).
